I don’t know about you, but I am always on the hunt for easy, delicious and wholesome recipes during summer. This simple vegan pesto can be just the thing you are looking for this summer. Sometimes I just plain give up and it’s watermelon, popsicles or ice cream for everyone. On those rare nights when I’ve just had it, I entertain myself with EMFH at dinner time.  Every Man For Himself nights has been known to give me the crazy laughs! It tends to bring to light how spoiled my family has become. They seriously expect dinner on the table every single night. Aren’t they so cute?!

It is perfection as:

Sandwich spread (sky’s the limit folks! Think BLT) Also great on toast, garlic bread or bruschetta

Sauce for pasta salad (cold or hot)

Sauce for Pizza (try using whole grain pita bread as pizza crust this summer)

Sauce for a summer veggie tart

A Dip for veggies or crackers

As you can see from the pictures, my basil had seen better days. That’s what inspired this recipe in the first place. I don’t like seeing things go to waste, that includes fresh herbs.  However, because I didn’t have a surplus of basil, I also added some flat leaf parsley. Feel free to use whatever combination of fresh herbs that you desire. You really can’t go wrong.  Fresh herbs in the summertime make me so happy! If you haven’t tried growing your own yet, there’s no time like the present. It is lovely to be able to step right outside my front door and cut some fresh herbs for dinner. You will love this simple vegan pesto on and in so many things. It’s great year round.




This simple vegan pesto sauce is quick and easy to prepare. It gets its classic cheesy flavor from nutritional yeast. Delicious on pasta, pizza sandwiches and much more.

Total Time:5 min
Yield:1.5 cups
* 1 1/2-2 cups fresh basil
* 1/2 cup walnuts or pine nuts
* 1/2 cup extra virgin olive oil
* 1 Tablespoon fresh squeezed lemon juice
* 1/2 teaspoon lemon zest
* 3 cloves of garlic
* 2-3 Tablespoons of Nutritional Yeast
* salt and pepper to taste
1. Place all ingredients, except olive oil into the bowl of a food processor (fitted with S blade) or a high-speed blender

2. Blend until ingredients are roughly chopped and starting to combine.

3. Drizzle olive oil into food processor bowl while it is running

4. Scrape sides if necessary

5. Store in an airtight container in fridge for up to one week
