I’ve been fighting allergies, or a small head cold lately. I can’t decide which. I feel fine, but my scratchy voice and stuffy nose say otherwise. Anyhow, all this sneezing, coughing and sniffling got me craving a cold, refreshing beverage that will help reduce the yuckiness going on. I wasn’t looking for anything hearty like a smoothie, but rather, refreshing like lemonade. So I created this lovely concoction that I refer to as ginger matcha lemonade.

Spring has sprung (almost!)

You guys, I absolutely love Springtime! So much promise and warmth…. finally warmth! Signs of Spring are all around us. There’s something so exquisite and yet so delicate about the first buds of the season. They are so tiny and pure. Holding so much hope for the beauty soon to arrive and the warmth and sunshine that will begin to stay a while longer. God’s glorious creation, clothed in all its majesty, and it’s breathtaking! I begin to crave lighter foods and more tart flavors as the weather thaws. This ginger matcha lemonade is such a great way to get some of the same ingredients that you might incorporate into a smoothie or a hot tea but in a lemonade instead.

Yield:12 oz
* 1 cup coconut water
* 1/2 cup fresh squeezed lemon juice
* 1/4 cup fresh or frozen pineapple chunks
* 1 Tbl chia seeds
* 1 large chunk or 1 Tbl fresh ginger
* 1 Tbl Raw honey, Vegans use: maple syrup, coconut syrup, agave, or another vegan liquid sweetener of choice
* 2 tsp matcha powder
1. Place all ingredients into a high-speed blender and blend on high for 1 minute or until well combined. Pour over ice or drink at room temperature. Can make a double batch and store in the fridge for up to two days. Shake before drinking as contents may have settled.
