I love a sweet treat on a spring day. With spring around the corner, everyone looks forward to this time of year when the trees and flowers start to bud. If you are lucky enough to live in a warm climate and grow citrus trees, then you already know what a great addition they can be to your landscaping. If not, the great news is that lemons are available year-round in the grocery store and their uses are endless. After all the chocolate of Valentine’s Day, it is nice to switch it up with a lemony dessert.

 Let me start off by saying that this is not Nina. Sorry, I know everyone loves her and her fabulousness but do not worry, this is still her recipe and I’m only briefly taking over her blog. Haha. My name is Taryn (more to come about me later) but Nina and I have been friends for 10 years. She has taught me so much in the ways of the kitchen and every conversation with her is a cooking lesson. I love it! Once we start talking, our chats can easily last hours. So during our last weekly chat, she mentioned these Vegan Lemon Bars and I immediately said please send me the recipe. Not being vegan myself, the ingredients to this recipe are simple and after making the crust, I was sold. The coconut sugar (my new favorite pantry staple) mixed with almond flour smells delicious as you bake the crust.  The zesting, the juicing and the lemon extract of the top layer all make for a great combination of lemony goodness. So as Nina is busy cooking up more wonderful recipes, I hijacked her blog to gush about these very addicting treats.

My Love for Lemons

Ahh, lemon, my favorite fruit! So many uses, one beautiful smell:) Last year, I finally planted a lemon tree and while I hope to have a bountiful lemon production in the future, only one lemon has produced so far. I always buy lemons at the grocery store because they bring wonderful color to your kitchen counter can brighten any recipe or just your glass of water and I personally love to use them in the garbage disposal for a fresh sink smell. I made these bars in the afternoon, let them freeze overnight and then proceeded to have them for breakfast. Ok, then I snacked on them again at lunch too. I love that the bars are stored pre-cut in the freezer for ideal portion control. They are the perfect light and airy treat to get you in the mood for spring. These vegan lemon bars are so divine with their refreshing lemony flavor and their crisp and chewy delicious crust. They are the perfect treat to indulge your lemon cravings. There is no coconut in them, so you can really taste the lemon. Whip these up the next time you need a dessert to impress your guests. They also work great as a single serve dessert, when you cut them into squares and store them in your freezer. Ready anytime your sweet tooth strikes. If they last that long!

Prep Time:30 min
Yield:12 bars
* Crust:
* 1 cup oats
* 1 cup almond flour
* 1/2 cup cane sugar (may sub coconut sugar)
* 8 Tbls (1 stick) vegan butter, melted ( I prefer the Earth Balance sticks)
* pinch of salt
* Lemon Filling:
* 1 1/2 cup fresh squeezed lemon juice
* 2 Tbls Lemon zest
* 1 tsp lemon extract (optional) if you prefer a stronger lemon flavor
* 1 cup unsweetened vegan milk (I prefer cashew)
* 1/2 cup pure maple syrup (may sub coconut nectar)
* 1/2 cup cane sugar
* 4-5 Tbls arrowroot powder or cornstarch
* pinch of salt
* pinch of turmeric powder for color (little goes a long way)
* 4 Tbls vegan butter
* Requires freezer time of 6 hours to overnight*
1. Preheat oven to 350 degrees

2. Crust

3. Place oats, almond flour, sugar and salt in the bowl of a food processor, fitted with an s blade

4. Pulse until combined

5. Add in melted vegan butter and pulse until dough begins to form a ball

6. Spread or pat down evenly into an 8x8 parchment lined baking pan

7. Bake on middle rack for 15-20 minutes, or until golden brown

8. Cool completely

9. Lemon filling

10. Zest and juice your fresh lemons

11. Add all Lemon filling ingredients except the 4 Tbls of vegan butter to the blender

12. Blend until smooth and no lumps remain

13. Pour lemon mixture into a medium saucepan over medium/high heat

14. Stir continuously with a whisk until it begins to thicken

15. It should coat the back of a spoon and form a ribbon on the surface before blending back into the mixture

16. Once thickened, add the 4 Tbls of vegan butter to the mixture and stir until it is melted

17. Pour lemon mixture into cooled crust

18. Place in freezer for minimum 6 hours or overnight

19. Take out of freezer and remove from pan with parchment attached

20. Cut into squares and store in an airtight container in the freezer

21. Leave lemon bars out for 20 minutes to thaw slightly if you do not want to eat frozen

22. Store in freezer for up to one week
