Creamy Vegan Tortilla Soup
Vegan tortilla soup!
I crave soup all the time! I love to make a huge pot of soup on a Sunday and then snack on it all week. This week I created a delicious vegan tortilla soup. It’s filling and full of wonderful and healthy ingredients that keep me feeling full and satisfied. But the other great thing about a bowl of soup is the toppings! Some of my favorite pairings:
- tomato basil soup with grilled cheese and pesto
- chicken noodle and goldfish crackers
- clam chowder and oyster crackers
- chili and Fritos
- vegetable soup and dumplings
The list could go on and on but you get the idea. Tortilla soup has a wonderful array of toppings to choose from that make this dish a must-have in your dinner rotation.
A Well stocked pantry
Most of these ingredients are staples in my pantry. And let’s face it, a well-stocked pantry can make all the difference when you need to come up with something quick and easy for your family. I have made tortilla soup for years with chicken stock and chicken but when I discovered this yummy Vegan Protein broth at my grocery store, I had to try it with this recipe.
Some of the things I like to keep in the pantry:
Beans, canned corn, diced tomatoes, stock or broths of all kinds, rice, pasta, nuts and dried fruit
Tortilla Soup Please
I live in Texas, land of wonderful Mexican food and I wouldn’t dare say that my cooking even comes close to authentic Mexican goodness but this soup is a Cinco de Mayo treat. I found this Vegan Protein Broth in the grocery store quite by accident and wondered if the broth was vegan why not go all the way with a vegan tortilla soup. Still the same great ingredients but with a different flare. No chicken, cheese or sour cream as toppings but the creaminess of this broth and avocado still satisfies. Top it with as many vegan tortilla chips as you want and this checks all the boxes for a great soup: healthy, hearty and savory.

* 1/2 yellow onion
* 4 cloves Garlic
* 4 cups Vegan Protein Broth (creamy legume and vegetable broth)
* 1 can diced Tomatoes
* 1 tbsp Chilli powder
* 1 tsp Cumin
* 1/2 tsp Coriander
* 1 can Black Beans
* 1 can corn
* Toppings: diced avocado, Cilantro, lime juice, Vegan tortilla chips
2. Add garlic and cook for a minute.
3. Add broth, tomatoes and spices and simmer for 10 minutes. Do not let it come to a boil.
4. Add beans and corn and simmer another 10 minutes.
5. Serve with toppings of choice.
