Chocolate is a serious subject in my home. So serious, in fact, that we always have it on hand.  Over the last decade of marriage, I have discovered that it is the way to Mr. Hobbies So Fancy’s heart.  He will find unique artisan chocolate bars in his stocking every Christmas and sometimes in his suitcase when he arrives to his work destination. As much as I love shopping and scouring the internet for interesting chocolate bars, I love creating my own combinations even more. My vegan raspberry quinoa bark was my latest creation. Not only do the colors look so striking, but the light crunch and the divine combination of raspberries and chocolate separate this bark from all the rest.

Chocolate~ you decide what kind to buy and where. We like fair-trade, dark and vegan.

Freeze Dried Raspberries~I prefer freeze dried, because there is no moisture that might ruin the chocolate’s texture or shelf stability. They lend a nice crunch as well.

Puffed Quinoa~ adds protein and a delicious crunch.

maca powder (optional)~ adds a nice touch of caramel flavor and extra antioxidants.

Sea Salt Flakes~ BecauseMmmmm!!!

DIY vegan raspberry quinoa chocolate bark is super simple to make and quite impressive to share. The freeze dried raspberries and the puffed quinoa add a nice, light crunch. These simple homemade chocolates are a hit for any occasion, or to have on hand in your fridge for whenever a chocolate craving hits. No need to splurge on artisan chocolates anymore, make your own!

Prep Time:5 min
Total Time:30 min
Yield:3 dozen pieces
* 1 lb vegan (dairy-free) chocolate
* 3/4 cup puffed quinoa
* 1/2 cup freeze dried raspberries
* 1 Tbl maca powder (optional)
* 2 tsp large sea salt flakes
1. Melt chocolate in a double broiler

2. Add puffed quinoa or (puffed rice), freeze dried raspberries and maca powder (optional) to melted chocolate

3. Pour mixture onto a 13x9 or larger, parchment lined sheet pan

4. Spread chocolate mixture evenly, but not too thinly

5. Sprinkle lightly and evenly with sea salt flakes

6. Place in the fridge for about an hour to harden or freezer for 30 minutes

7. Break in to medium to small pieces and serve

8. May store in the fridge or freezer for up to 2 months
